Cookie Butter Pretzels

Cooking and baking in the kitchen has always been fun for me! My goal with the blog is to share my most favorite recipes for weeknight dinners, date night at home, hosting, and snacks for any season in the year.


Cookie Butter Pretzels

If you have never tried cookie butter before, I highly recommend adding this to your grocery cart ASAP! The first cookie butter I tasted was from Trader Joe’s, and the creamy consistency plus delicious gingerbread cookie taste is addicting! These cookie butter pretzels will make your tastebuds do a happy dance! Serve with coffee or crush and garnish on ice cream, or simply eat a handful or ten. :)

Don’t worry if you don’t have a Trader Joe’s near you - cookie butter can be found in most grocery store chains!

Lotus Biscoff Cookie Butter - https://bit.ly/3ooMcnq; I found this brand on Amazon, Walmart, and United/Albertsons, so it is much more accessible and sold in many stores.


Ingredients

  • ½ cup vegetable or canola oil

  • 2 tablespoons brown sugar

  • 1 ½ teaspoons cinnamon

  • ¼ cup Cookie Butter

  • ⅔ cup white chocolate chips

  • 5 cups pretzels

  • Sprinkles for decoration, if desired


Materials Needed

  • Large microwave-safe bowl

  • Small microwave-safe bowl

  • Wax paper/parchment paper


Directions:

  1. Line a large baking sheet with wax paper.

  2. In your small microwave-safe bowl, melt on low power for 30 seconds your ¼ cup of cookie butter. *Cookie butter has a thicker consistency - do not scorch your cookie butter when you microwave it. I recommend adding a little milk or water to your ¼ cup cookie butter to prevent scorching in the microwave.*

  3. Set the small bowl with cookie butter aside.

  4. Add to your large bowl the white sugar, brown sugar, cinnamon, and vegetable or canola oil. Add your 5 cups of pretzels to the bowl and toss them around to coat.

  5. Microwave for 1 minute and stir to continue coating the pretzels. Use an oven mit to protect your hands from the warm bowl.

  6. Heat pretzels for an additional minute and stir them to coat.

  7. Now, pour in your heated cookie butter and white chocolate chips. Melt the mixture for 1 minute and stir to coat.

  8. Once good and melted, spread your pretzels flat on the lined baking sheet. Chill in the refrigerator until set.

  9. Store your pretzels in an air-tight container and enjoy!
