Easy Homemade Pancakes

Hello, Dear Friends,

From the Kitchen of Lady K; adapted from All Recipes

Did someone say brunch? A hot cup of coffee, bacon sizzling on the stove, and all the people you love joining you around the table. My definition of the perfect morning!

To make pancakes extra fun - use a squeeze bottle (like a condiment bottle with a narrow pour spout) to draw on the skillet to make designs on your pancakes. You just draw the design and let it cook for a few seconds before scooping additional pancake batter on top. Enjoy!

Ingredients Needed:

  • ¾ cup milk

  • 2 tablespoons white vinegar

  • 1 cup all-purpose flour

  • 2 tablespoons white sugar

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 egg

  • 2 tablespoons butter, melted

  • cooking spray

Directions

1) Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour.”

2) Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.

3) Whisk egg and butter into "soured" milk. Pour the flour mixture into the milk mixture and whisk until the lumps are gone.

4) Heat a large skillet over medium heat and coat it with cooking spray. 5) Pour 1/4 cupful of batter onto the skillet and cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip with a spatula and cook until browned on the other side.

5) Repeat with the remaining batter.

Lady K’s One Thing:

Favorite Store-Bought Pancake Mix

Kodiak Pancake Mix - Can be found at most grocery stores! Easy to use - protein filled, fluffy, this mix checks all the boxes! (These pancakes tend to be more dense, if you like a light airy pancake, this is probably not the product for you!)

Happy October,

Lady K
